Burrito Style Fajitas
BURRITO STYLE FAJITAS
COMPLIMENTS OF MARIO FLORES
IN 5 LITER CADILLAC PRESSURE COOKER COMBINE:
½ LB OF SMOKED BACON (CHOPPED)
1 ONION THINLY SLICED OR CHOPPED
5 CLOVES OF GARLIC PRESSED
1 4-OZ.CAN MILD GREEN CHILIES
2 TBSP. GARLIC OIL
SAUTÉ BACON UNTIL BROWN, ADD ONION, GARLIC, GREEN CHILIES AND GARLIC OIL. CONTINUE TO SAUTÉ UNTIL ONIONS ARE TRANSPARENT.
ADD:
6 ROMA TOMATOES, DICED
2 ½ LBS. SLICED SIRLOIN TIP (FAJITA STYLE)
1 ½ CUPS UNCOOKED PINTO BEANS, RINSED
3 CUPS WATER
½ CUP BEEF BROTH POWDER
1 TSP. CUMIN
1 TBSP. HERBAMARE
2 – 3 TBSP. MESQUITE SMOKEY ONION BBQ RUB
2 TBSP. CRYSTALLIZED GINGER
BRING TO A BOIL, SECURE PRESSURE COOKER LID, AND BRING TO SECOND RING. PRESSURE FOR 55 MINUTES AND ALLOW PRESSURE TO DROP ON ITS OWN.
ADD:
2 SLICED BELL PEPPERS (CAN BE GREEN, YELLOW, OR ORANGE)
THICKEN WITH ULTRA GEL
SERVE WITH CHEESE, SOUR CREAM IN A HOMEMADE TORTILLA
