Pomegranates!

If you like the color red, you will love this salad!
Did you know that November is National Pomegranate Month!



Pomegranate Salad

1 large pomegranate

1 large apple (your favorite variety)

½ cup heavy cream

3 Tablespoons Powdered Sugar

1 teaspoon vanilla

¼ cup roasted pecans (optional)

Remove all seeds from pomegranate. Cut apple into bite-sized pieces, no need to peel. Add apple to pomegranate. Combine, cream, sugar and vanilla and whip until stiff. Fold cream into pomegranate seeds and apple. Sprinkle with pecans.

This is a fast and easy salad to enjoy during pomegranate season (November through January). Make sure to add this salad to your Holiday menu plans.

*Tip: when extracting the pomegranate seeds, cut the top off and then score the skin where the pulp is, like an orange. Break apart the pomegranate in a bowl submerged in water to prevent juice spraying across room and seeds will easily pull away.
